Makes: 12-18 cookies
You Will Need:
- Measuring cups
- Measuring spoons
- Mixing bowl
- Baking sheets
- Cooking spray or parchment paper
- Whisk
Ingredients:
- 1 cup pastry flour
- 1/2 cup coconut oil – melted
- 1/2 cup maple syrup
- 1/4 cup chopped caramel
- 1 cup grated carrots
- 1 cup rolled oats
- 1 tsp grated ginger
Optional:
- 2/3 cup chopped walnuts
Instructions:
- Preheat the oven to 375ºF (190ºC)
- Lightly grease cookie sheets or line with parchment paper
- In one bowl, mix together flour, oats and carrots
- In another bowl combine coconut oil, maple syrup, and ginger
- Combine the wet ingredients into the dry ingredients
- Add in the caramel pieces (and walnuts)
- Use a tablespoon to drop the dough on to the cookie sheet
- Bake for 10-12 minutes
- Allow cookies to cool before eating
